Based on recipe from Better Homes and Gardens
1 cup whole wheat flour
1 cup rolled oats
2/3 cup packed brown sugar
¼ tsp baking soda
½ cup butter (I used Earth Balance)
In mixing bowl, combine flour, oats, brown sugar and baking soda. Cut in butter until mixture resembles course crumbs.
Reserve ½ cup of the flour mixture. Press remaining flour mixture into the bottom of an ungreased 9x9x2 inch baking pan. Spread with fruit filling (prepared as shown below). Top with reserved flour mixture.
1 cup peaches, peeled and sliced
¾ cup water
In a medium saucepan, combine 1 cup peaches and ¾ cup water. Bring mixture to boil; reduce heat. Cover and simmer for 5 minutes. Meanwhile, combine ¼ cup sugar and 1 tbsp all purpose flour. Stir into peach mixture. Cook and stir about 1 minute more or until very thick. Stir in ½ cup unsweetened shredded coconut.
Bake in 350 degree oven for 30-35 minutes or until the top is golden. Cool in the pan on a wire rack. Cut into bars.
We love making salsa, so we had to make it with our fresh peaches. It’s a perfect summer snack and we serve it on our home made flax crackers. Here is our basic recipe for peach salsa.
1 cup peaches, peeled and chopped
½ red bell pepper, finely chopped
Handful parsley or cilantro, finely chopped
½ jalapeño pepper or sweet mini peppers depending on if you want it spicy or not
½ cup green onions, red onion or yellow onion finely chopped
Juice of 1 lime mixed with 1 tsp agave nectar or honey
Add all to a bowl and combine well.
