Sugar Cookie Cutouts

2 1/2 cups unbleached organic flour
2 tsp baking power
1/2 tsp salt
1 cup organic sugar
1/4 cup non-dairy or organic milk
2 tsp vanilla extract
1 cup vegan butter (i.e. Earth Balance)
Using a stand mixer, blend butter, vanilla, milk and sugar. Add flour, baking powder and salt. Blend well. Gather dough and form into a large ball. Wrap dough in plastic wrap and refrigerate for 1 to 3 hours or until dough is chilled. Roll out dough and cut into shapes as desired. Bake for 10 to 12 minutes at 350 degrees. Frost when cooled.
4 cups powdered sugar
1 tsp vanilla
4 tbsp non dairy milk
1 tbsp vegan butter
With a mixer, blend all ingredients until smooth. If icing is too thick, add more milk. Frost cookies. Sprinkle with colored sugar if desired.
