Chocolate-Kale Brownies

Who doesn't love chocolate for Valentine's Day?  I received this recipe for Chocolate-Kale brownies from a cooking demonstration done by a local company called Sugarcoat who specializes in making healthy vegan smoothies and treats at events throughout Las Vegas.   These brownies are absolutely amazing!  There are only 4 ingredients and baking them is not required.  They are ready in minutes! Make sure to double the batch because you will not be able to stop eating them.   They are healthy enough that you can go ahead and serve them to your kids for breakfast!

½ cup raw almonds (best if soaked in water overnight and drained)
¼  cup kale, chop first
¾ cup dark chocolate chips (I used dark carob/vegan chips)
¼ cups raisins

Place all ingredients in a blender or food processor.  Blend well on high speed until smooth.  Shape into balls or lay mixture flat and cut as desired.  Refrigerate and enjoy!

    How it all Started

    “More Broccoli, Please” was inspired by a small moment I will always remember.  My son was two years old at the time when I heard him say these words at dinner after he finished his first helping of broccoli.  These words were music to my ears!  I get so excited when he eats his vegetables and other healthy foods. I let him know how happy I am and proud of him for having healthy eating habits. 

    To be honest, it isn’t always easy, and sometimes takes some begging and pleading, but when he helps prepare the foods, he is more likely to eat them.

    This blog is inspired and dedicated to my little boy and Chef  Luke.  May you all have fun in the kitchen with your kids and create life lasting healthy habits and finally get  those kids to eat their fruits and vegetables!
