A, 200% of vitamin C and 1,020% of vitamin K. It is also a good source of minerals copper, potassium, iron, manganese and phosphorus. What is not to LOVE about this wonderful leafy green? I prepare it in many delicious ways such as, chopped and added to soups, dehydrated kale chips, chopped in salads and added to smoothies. Below is one of my favorite kale salad recipes from one of my favorite Vegan cookbooks.
Crazy Sexy Kale Salad, recipe by Kris Carr, Crazy Sexy Kitchen
1 bunch kale, any variety, shredded by hand
1 cup diced bell peppers, red yellow or orange
¼ cup chopped parsley
1 ½ avocados, pit removed and chopped
2 tbsp flax oil (or olive oil)
1 ½ tbsp lemon juice
Sea salt, to taste
Pinch of cayenne, to taste
1. In a medium mixing bowl, combine all ingredients. Massage and mix with your hands to “wilt” the kale and cream the avocado (this should only take a minute or two) and serve.
You can also add any extra fresh herbs and diced vegetables of your choice. We served ours wrapped in a cucumber slice, as suggested, to make it fun and fancy!
