I wanted to share this simple salad we made with a delicious dijon vinaigrette.
Fresh Garden Salad with Dijon Vinaigrette

1 cup romaine lettuce, torn into small pieces
1 cup of kale, finely chopped*
1 head of broccoli, finely chopped*
1 sweet red pepper, finely chopped
Handful of fresh parsley, chopped
Optional: Dried cranberries
*I used a food processor to finely chop the kale and broccoli.
Add all ingredients to a large bowl and mix well. Dried cranberries would make a good addition to this salad also.
We love this new dressing that we discovered. It goes great on most garden salads and best of all, my son loves it!

¼ cup Dijon mustard
¼ cup olive oil or flax oil
¼ cup sherry vinegar (or apple cider vinegar)
3 tbsp agave nectar (or honey, maple syrup or sweetener of choice)
3 garlic cloves (I used less), minced
Ground pepper to taste
In a bowl, whisk all ingredients or pour all ingredients into a glass jar and shake well.
My son really enjoys being involved, and its always fun when we can prepare and eat the food that we grew ourselves. I hope you enjoy this simple, fresh garden salad. We are looking forward to planting and growing more in the Spring and won't give up on our little garden!
