recipe for Vegan Sloppy Joes. It was one of the winning recipes in the Let’s Move!/Epicurious recipe contest for kids called the Healthy Lifetime Challenge. It is made with Tempeh which is slightly fermented and cooked soybeans with
added grains. My son absolutely loved this healthy version of my favorite classic sandwich. We also substitute the potato chips with a purple cabbage and radish salad with a balsamic orange dressing, recipe is also shown below.
Vegan Sloppy Joes
Alexea, age 9, Epicurious winner 2012
1 tablespoon olive oil
1 (8 oz) package (Organic, Non GMO) tempeh, sliced
1 tablespoon low-sodium soy sauce
½ onion diced
2 garlic cloves, peeled and mashed
1 tablespoon diced and seeded jalapeno
1 (14 oz) can diced tomatoes
¼ cup apple-cider vinegar
1 tablespoon mustard
1 tablespoon maple syrup
½ tablespoon molasses
Whole wheat buns or any bread of choice
1. In a large sauté pan over moderate heat, warm the olive oil. Add the tempeh, soy sauce, and ¼ cup water and cook for 8 minutes, breaking up the tempeh. Add the onion, garlic, jalapeno, tomatoes, apple-cider vinegar, mustard, maple syrup and molasses and cook, stirring often for 10 minutes.
2. While the Sloppy Joe mixture is cooking, toast the buns in the oven or toaster oven. Divide the Sloppy Joe mixture among the buns, top with lettuce and avocado if desired and serve.
These were so delicious and tasted just like the Sloppy Joes that I remembered. I hope that you and your family with love this healthy version of this delicious classic sandwich!

2 cups Purple Cabbage, Shredded
1 bunch Radishes, Sliced thin
4 Green Onions, chopped
½ cucumber, peeled and chopped
Here is the dressing recipe I used and this one has been a favorite for all my salads. I love the orange and balsamic together.
Orange Balsamic Salad Dressing
¼ cup olive oil
¼ cup orange juice
¼ cup balsamic dressing
1 tsp Dijon mustard
Blend all ingredients together in a blender. Toss into salad and enjoy!
